Ingredients
  • 3 pounds Yukon gold potatoes, skin on, chopped into ½- to ¾-inch pieces
  • Kosher salt
  • 8 ounces thick-cut bacon, or more if you're really feeling bacony
  • 2 large shallots, finely chopped
  • 1 cup low-sodium chicken stock
  • ½ cup white vinegar (or apple cider vinegar)
  • 2 tablespoons pickle brine
  • 2 tablespoons grainy mustard
  • 1 ½ tablespoons sugar
  • 8 scallions, finely chopped
  • ½ bunch fresh parsley, finely chopped
  • Freshly ground black pepper
