Baked Croquette 揚げないコロッケ
Ingredients
  • 2 lb russet potatoes (about 4 potatoes)
  • 1 onion
  • 3 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc.) (divided)
  • 1 lb ground beef
  • freshly ground black pepper
  • ¼ tsp kosher or sea salt (I use Diamond Crystal; use half for table salt) (for beef)
  • 2 ½ cup panko (Japanese breadcrumbs)
  • ½ tsp kosher or sea salt (I use Diamond Crystal; use half for table salt) (for potatoes)
  • 1 Tbsp unsalted butter
  • 3 large eggs (50 g each w/o shell)
  • ½ cup all-purpose flour (plain flour)
