Chicken Curry (family recipe)

Ingredients
  • 4 boneless skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 cup mayonnaise
  • ¼ cup parmesan cheese
  • 2 teaspoons curry powder
  • 1 teaspoon lemon juice
  • Breadcrumbs
Steps
  1. Preheat oven to 350 degrees.
  2. Mix together chicken soup, mayonnaise, parmesan cheese, curry powder and lemon juice.
  3. Place chicken in a well-greased 9”x13” glass baking dish. Pour mixture on top to cover chicken completely. Lightly sprinkle breadcrumbs and more parmesan cheese on top.
  4. Bake at 350 uncovered for about 45 minutes or until chicken is no longer pink.
Notes
  • SK notes: week of Sep 27, 2017 I made this with 2 huge bone-in, skin-on chicken breasts. I cut carrots into chunks, red potatoes, too ... all similar sizes to cook evenly. Added a can of crimini mushrooms. Used my oval dutch oven. So incredibly delicious!!!!! Needed about 1 hour 15 minutes total in oven for these huge chicken breasts.
  • As usual, I was generous with the curry powder and parm cheese. Didn't use any bread crumbs or extra cheese on top.
