Erin Jeanne Mcdowell's Deep-Dish Berry Cobbler Pie
Use any combination of berries you like for this sweet and juicy marriage of cobbler and pie.
Ingredients
  • subheading: ALL-BUTTAH PIE DOUGH:
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon fine sea salt
  • 4 ounces (8 tablespoons) cold unsalted butter, cut into ½-inch cubes
  • ¼ cup ice water, plus more as needed
  • subheading: FILLING:
  • 6 heaping cups (prepared/trimmed) berries-slice strawberries, if using; other berries can be left whole (see Recipe Note)
  • 1 tablespoon fresh lemon juice
  • ⅓ cup granulated sugar
  • ⅓ cup packed light brown sugar
  • ⅓ cup all-purpose flour
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon fine sea salt
  • 2 teaspoons vanilla extract, or 1 vanilla bean, halved lengthwise, seeds scraped out and reserved
  • subheading: BISCUIT TOPPING:
  • 1 cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¾ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 2 ounces (4 tablespoons) cold unsalted butter, cut into ½-inch cubes
  • ¼ cup buttermilk
  • 1 large egg
  • ½ teaspoon vanilla extract
  • Turbinado or coarse sugar for sprinkling
