Crispy Pan-Fried Catfish
Ingredients
  • 4 to 6 whole catfish fillets
  • ⅓ cup cooking oil (vegetable, canola)
  • 2 large eggs
  • ⅓ cup all-purpose flour
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly cracked black pepper
  • ¼ teaspoon Creole or Cajun seasoning, or to taste, optional
  • ½ teaspoon Old Bay seasoning, or to taste
  • ½ teaspoon paprika
  • ¼ teaspoon each onion powder and garlic powder
  • 1-½ cups cracker meal, dry bread crumbs, cornmeal, or panko bread crumbs
  • 1 teaspoon dried parsley flakes
