  • 1 ¾ cup almond milk (or any non-dairy milk)
  • 1 tsp apple cider vinegar
  • ¼ cup lemon juice
  • Zest of two lemons
  • 1 tsp pure vanilla extract
  • 2 cups blueberries
  • subheading: For Lemon Blueberry Topping:
  • 1 ½ cups blueberries
  • 2 tbsp lemon juice
  • Zest of one lemon
  • ½ cup turbinado sugar (or vegan cane sugar)
  • ½ tsp pure vanilla extract
  • 1 tbsp tapioca starch
  • ½ cup + 2 tbsp water
