Carrot Cake Muffins (vegan) (oil-free) (gluten-free) (no added sugar)

Ingredients
  • 2 very ripe bananas, mashed
  • ⅓ cup grated carrot
  • ¼ cup water
  • 1 tsp allspice
  • 2 tbs diced ginger (optional)
  •  
  • ½ cup chickpea flour
  • ½ cup rolled or quick cooking oats
  • 1 tsp baking powder
  • Pinch of salt (optional)
Steps
  1. Have your steamer hot and ready to go
  2. Mash the banana in a large bowl
  3. Add the  carrot, allspice, water, ginger (if using) and mix well
  4. Add the flour, oats, baking powder, salt (if using) and mix well
  5. Fill muffin cups all the way and place in steamer
  6. Steam 30 minutes
  7. Remove from steamer and let stand 15 minutes
