IP Instant Pot Swiss Steak
Ingredients
  • 1 ½ lbs. sliced rump or I used eye of round beef roast( or Round Steak)
  • 3 tbsp. olive oil
  • ½ tsp. onion powder
  • 1 tsp. minced  garlic
  • ½ tsp   Worcestershire Sauce
  • 1  C  Beef broth
  • 1- 11.5 oz. Can Low Sodium V-8 Juice
  • 1-  Small can  No Sodium Added Tomato Sauce
  • Salt and Pepper to taste
  • 1- ½ tbsp. corn starch for thickening slurry

Steps
  1. Put oil in pressure cooker and set to browning function. Pat meat dry and brown on both sides. Set aside. Deglaze pot with a bit of Beef broth.  Pour Beef broth, tomato sauce and V-8 into pot and add onion powder, garlic, Worcestershire, and salt and pepper into the pot.
  2. Close lid, set to seal. Manual for 25 minutes and NPR
  3. When finished, open cooker and immediately stir corn starch mixed with ¼ cup cold water into gravy to thicken. Adjust seasoning with salt and pepper if needed. Serve with Mashed Potatoes and vegetable.
