Yakamein - New Orleans-Style Noodle Soup
“ Yakamein is a type of beef noodle soup found in many Creole restaurants in New Orleans, Louisiana. It is also a type of Chinese wheat noodle. The soup consists of stewed beef in beef-based broth served on top of noodles and garnished with half a hard-boiled egg and chopped green onions. Cajun or Creole seasoning and chili powder are often added to the broth.”

Ingredients
  • 1½ pounds beef chuck roast, cut into 1-inch pieces
  • Salt and black pepper to taste
  • ½ teaspoon cayenne pepper, or to taste
  • ½ teaspoon paprika
  • 2 tablespoons avocado or vegetable oil
  • 1 cup yellow onion chopped
  • ½ cup celery diced
  • ½ cup green pepper diced
  • 1 teaspoon minced garlic
  • 2 tablespoons soy sauce
  • 1½ teaspoons Worcestershire sauce
  • 1½ teaspoons granulated garlic
  • 8 cups water
  • 2 tablespoons beef bouillon paste
  • 12 ounces dry spaghetti

  • 4 large hard boiled eggs, peeled and halved
  • 1 cup green onions sliced
  • Hot Sauce of choice
