Crispy Sourdough Pizza Crust (No Steel or Stone!)

  • 240 g ( 1 cup) quick “no-cook” pizza sauce, Sicilian tomato sauce or pomodoro sauce
  • Fine sea salt
  • Black pepper
  • Handful fresh basil
  • Freshly grated Parmesan cheese
  • Olive oil
  • 226 g ( 8 oz) whole-milk mozzarella block cheese, shredded, about 2 ½ cups
