Chewy Mochi Cake, Made with Fresh Corn
Ingredients
  • 2 ½ cups corn kernels, preferably fresh cut from 2 to 3 cobs
  • ½ cup full fat coconut milk
  • ¼ cup butter, melted and cooled slightly, plus more for greasing baking pan
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ tsp vanilla extract
  • 2 cups glutinous rice flour (I use Koda Farms Blue Star Mochiko)
  • 1 tsp baking powder
  • ½ tsp salt
