Neal Barnard Lasagna
Ingredients
  • ¼ cup water
  • 1 onion, chopped
  • 1 carrot, grated
  • 3 garlic cloves, pressed or minced
  • 2 cups sliced mushrooms (about ½ pound)
  • 1 15-ounce can crushed tomatoes, low-sodium
  • 1 28-ounce can tomato sauce, low-sodium
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon fennel seeds
  • ⅛ teaspoon cayenne pepper
  • 1 pound firm tofu, low-fat
  • ½ cup finely chopped fresh parsley
  • 2 tablespoons soy sauce, low-sodium
  • 1 10-ounce package frozen chopped spinach, thawed and squeezed dry
  • 12 ounces dry lasagna noodles (about 10 noodles)
