  • 2 tbsp olive oil, divided
  • 1 large bunch greens, such as spinach, chard or kale
  • Salt and ground black pepper
  • 3 shallots, chopped
  • 2 tbsp Thai red curry paste or sriracha
  • 1 c. homemade chicken broth or water
  • 1 can (14 oz) coconut milk
  • ½ tsp honey or agave
  • 4 fillets (4 to 6 oz each) wild Alaska halibut
  • ¼ cup basil (or cilantro if you pass it) , chopped, plus extra for garnish
  • 1 lime, divided
  • basmati rice (optional)
