Jamaican Rice and Peas
Ingredients
  • 1 Tbsp canola oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ¾ cup liquid from the canned red kidney beans
  • 1 ½ cups water
  • ¼ cup chicken broth (or water)
  • 1 tsp ginger, minced
  • 1 tsp ground allspice
  • 2 stalks scallions, chopped
  • 4 stalks thyme (de-stemmed)
  • 1 scotch bonnet pepper (leave whole)
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 cups long grain rice
  • 540 ml can red kidney beans
  • 1 can (13.5 oz, 400 ml) coconut milk
