Ingredients
- 8 slices bacon [beef bacon in my case]
- 1 pound crisp young spinach
- 3 hard-cooked eggs, chopped
- ¾ cup Garlic French Dressing

- 1 cup olive oil
- ¼ cup vinegar
- ¼ cup lemon juice
- 1 teaspoon salt
- ½ teaspoon dry mustard
- ½ teaspoon paprika
- 1 clove garlic, cut in half crosswise
Steps

- Shake all ingredients except bacon together in a tightly covered jar. Put the garlic clove halves in the dressing and let stand refrigerated at least 1 hour before using. When flavour is strong enough, discard garlic pieces.

- Fry bacon until crisp, pouring off fat as it cooks. Drain and crumble.
- Tear spinach into a salad bowl. Sprinkle bacon and eggs on top.
- Pour dressing over and toss lightly. Serve immediately.
