Spinach Salad

Ingredients
  • 8 slices bacon [beef bacon in my case]
  • 1 pound crisp young spinach
  • 3 hard-cooked eggs, chopped
  • ¾ cup Garlic French Dressing
  •

  • 1 cup olive oil
  • ¼ cup vinegar
  • ¼ cup lemon juice
  • 1 teaspoon salt
  • ½ teaspoon dry mustard
  • ½ teaspoon paprika
  • 1 clove garlic, cut in half crosswise
Steps

  2. Shake all ingredients except bacon together in a tightly covered jar. Put the garlic clove halves in the dressing and let stand refrigerated at least 1 hour before using. When flavour is strong enough, discard garlic pieces.

  4. Fry bacon until crisp, pouring off fat as it cooks. Drain and crumble.
  5. Tear spinach into a salad bowl. Sprinkle bacon and eggs on top.
  6. Pour dressing over and toss lightly. Serve immediately.
