Dauphinoise Potatoes
Ingredients
  • 8 oz. Gruyère, coarsely grated (about 2 cups), divided, rind reserved if attached
  • 1 (12-oz.) can evaporated milk
  • 2 cups heavy cream
  • 2 garlic cloves, finely grated
  • 1 dried bay leaf
  • 1 sprig rosemary
  • 1 sprig thyme
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt
  • 1 tsp. freshly ground pepper
  • ¼ tsp. freshly grated nutmeg
  • 2½ lb. Yukon Gold potatoes (about 7 small)
