Lilikoi bread also known as passion fruit by RICH LUM
Ingredients
  • 1 cup of white sugar
  • ½ cup of butter.. Room temperature (RT)
  • 2 whole eggs (RT)
  • ¾ cup Lilikoi purée (RT)
  • 2 cups AP flour
  • 1.5 teaspoons baking soda
  • ½ teaspoon Hawaiian sea salt
Steps
  1. Grease your pans
  2. Method
  3. Cream the butter and sugar together
  4. Add eggs and mix until smooth
  5. Stir in Lilikoi purée
  6. Add in all dry ingredients and mix until combined
  7. Fill your pan(s) to about 1" below the top
  8. Cover with a paper towel and foil
  9. Cooking
  10. Add 1.5 cups of water to your pot
  11. Put your trivet in with one pan on top
  12. Close and seal your pot
  13. Set your pot to manual 55 minutes
  14. Allow for a 10 minute NPR
  15. Remove pan after cooking and set on a cooling rack. Leave bread in the pan until cooled.
  16. Turn bread out when cooled
  17. Optional....lilikoi glaze
  18. Optional...chopped Macadamia nuts
  19. Glaze
  20. 1 cup of powdered sugar
  21. 2 tablespoons Lilikoi purée - add more purée , ½ teaspoon at a time until you reach the desired consistency
Notes
  • Bunt pan(s) I used two 4 cup pans but a 6 cup pan will work
