Chicken Kale Salad with Peanut Vinaigrette

  • 1 cup finely chopped green cabbage
  • ½ cup shredded carrots
  • ¼ cup chopped fresh mint
  • ¼ cup chopped fresh cilantro
  • 2 small scallions, chopped
  • 1 ½ tablespoons chopped roasted, salted peanuts
