Snickers Overnight Oats (Vegan)
Ingredients
  • subheading: FOR THE OVERNIGHT OAT LAYER:
  • 1 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp peanut butter
  • 1 cup plant-based milk - I used oat milk
  • 2 tbsp date caramel layer (see recipe below) - can also use maple syrup
  • subheading: FOR THE CARAMEL LAYER:
  • 9 to 10 large Medjool dates - pitted
  • ½ cup boiling water
  • 2 to 3 tbsp roasted and salted peanuts - I like to add the peanuts after transferring 2 tbsp of the date paste to the overnight oat mixture, see instructions below
  • subheading: FOR THE CHOCOLATE LAYER:
  • ¼ cup vegan dark chocolate chips - I like the brand Enjoy Life
  • ½ tbsp coconut oil
