Prawn, Ginger and Broccoli Stir-Fry
Ingredients
  • 3 tablespoons coconut oil or good-quality animal fat
  • 500 g raw prawns, shelled and
  • deveined, tails left intact
  • 5 cm piece of ginger, cut into matchsticks
  • 1 tablespoon finely chopped
  • lemongrass, pale part only
  • ½ onion, sliced
  • 8 spring onions, white part only, cut into 6 cm lengths (reserve the green part for other recipes)
  • 300 g broccoli, broken into florets
  • 4 garlic cloves, thinly sliced
  • 1 long red chilli, thinly sliced
  • 2 tablespoons tamari
  • 2 tablespoons fish sauce
  • 2 teaspoons coconut sugar, honey or monk fruit sweetener (optional)
  • 250 ml (1 cup) Chicken Bone Broth
  • 1 ½ tablespoons tapioca flour, mixed with 1 tablespoon water
  • 2 handfuls of water spinach or baby spinach leaves
  • 1 handful of Thai basil leaves
