Panzanelle Salad
Non Traditional version of Tuscan Tomato & Bread Salad
Ingredients
  • ½ loaf stale bread
  • 1 kg mixed cherry tomatoes
  • Olive oil
  • Salt & Pepper
  • Parmesan Regiano
  • Red Wine Vinegar
  • Sugar
  • Garlic
Steps
  1. Cut bread into equal sized cubes
  2. Place bread cubes into frying pan & drizzle cubes with olive oil until each cube oiled & fry over medium heat until start to turn golden brown
  3. Grate over Parmesan Regiano & continue to toss bread cubes until all golden brown - set aside & allow to cool
  4. Cut each tomato in half & place in bowl with pinch of: salt + pepper + sugar + vinegar + minced garlic, mix & set aside for 20 minutes
  5. Cut fresh basil & add to tomatoes & mix, adjust salt, pepper, sugar & vinegar to taste
  6. ADD bread cubes & mix thoroughly, drizzle with olive oil
  7. Note: If after mixing & setting aside for 5 minutes all the dressing has been absorbed ADD more olive oil & vinegar
