Low Carb/Keto Calzone
Using fat head dough
Ingredients
  • subheading: Crust:
  • 1 ½ cups shredded mozzarella
  • 2 ounces cream cheese
  • 1 egg
  • ¾ cup almond flour
  • ½ teaspoon baking powder
  •  
  • Filling
  • 1 tbsp olive oil
  • 1 pound ground Italian sausage
  • 1 tsp minced garlic
  • 2 tablespoons of your favorite low carb pizza sauce + more for dipping
  • 1 cup shredded mozzarella
  • Pepperoni
  • ½ cup shredded Parmesan
  • Seasonings of choice (I used salt, pepper, red pepper flakes, parsley and Italian seasoning. Season to taste, I didn’t measure)

  • Red pepper flakes
  • Parsley

Steps
  1. Crust
  2. Heat your oven to 375°F.
  3. Add 1 ½ cups shredded mozzarella and 2 ounces cream cheese to a microwave-safe bowl.
  4. Melt the cheeses in the microwave for a total of 90 seconds in 30-second intervals, stirring between each interval.
  5. To the same bowl, add 1 egg, the almond flour, and the baking powder.
  6. Knead all the ingredients together with your hands until fully incorporated then create a large dough ball. (if dough sticks to your hands, dampen them with a little water)
  7. Roll out the dough between two layers of parchment paper. Don’t make it too thin.
  8. Remove the top parchment from the dough and move the bottom parchment with dough on to a baking sheet.
  9. Cook the filling
  10. Add ½ tbsp olive oil to skillet, add ½ tsp garlic and sauté for about a minute then add the ground sausage.
  11. Break apart and add seasonings
  12. Cook until fully brown.
  13. When almost finished add the cup of mozzarella and stir through until melted
  14. Spread 2 tbsp pizza sauce over one half of calzone add enough pepperoni to cover the sauce then sprinkle the Parmesan on top.
  15. Spoon the sausage mixture over the cheese.
  16. Fold the empty half of the dough over the top of the filled half and seal with a fork along the edges. Cut off extra parchment, if needed.
  17. Brush top with egg white, sprinkle red pepper flakes and parsley on top.
  18. Place in oven for 22 minutes.
  19. Dip (while calzone is baking)
  20. In a sauce pan, add the other ½ tbsp olive oils and heat, add remaining ½ tsp of garlic and cook for about a minute, add pizza sauce and cook on high heat until starting to stick. Reduce to simmer and simmer until calzone is finished. Put I to bowls and garnish with chopped parsley
  21. When calzone is finished, remove, slice and serve. Add a small bowl of the pizza sauce on the side for dipping
