Salted Pumpkin Crème Brûlée
Ingredients
  • 1 ¾ cups canned or freshly prepared pumpkin purée
  • 2 cups heavy cream
  • 1 cup whole milk
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¾ tsp freshly grated nutmeg
  • ½ tsp ground ginger
  • 1 vanilla bean, split lengthwise, seeds scraped out and reserved (or 1.5 tsp vanilla extract in a pinch)
  • 6 large egg yolks
  • Large pinch sea salt, plus more to finish
  • 8 T raw sugar
