I used 1 cup heavy whipping cream and 1 cup half n half
Also only had 2 1/2 cup broth so used 1 cup of potato water did not use but maybe 1 cup of cheddar in the soup. Used bacon and cheese to top soup. Did not have chives

  • 4 large russet potatoes, equal to 2 lbs.
  • ¾ teaspoon salt
  • 6 slices thick cut bacon
  • 1 large yellow onion
  • 3 cloves garlic, minced
  • 2 Tablespoon butter
  • ¼ cup flour
  • 3 ½ cups Chicken broth
  • 2 cups half and half
  • ¾ cup sour cream
  • ½ teaspoon pepper
  • 2 cups shredded cheddar cheese
  • ⅛ cup chives, finely diced
