Step-By-Step Beef Tamales
Ingredients
  • 8 lbs Boneless Chuck Roast Beef, Chicken, or Pork  Butt or Shoulder
  • 1 Large White Onion
  • 1 Head of Garlic  & 5 to 6 Cloves for the Sauce
  • 3 Bay Leaves
  • Beef or Chicken Bouillon (5 to 6 Tbsp or as needed)
  • Salt and pepper as needed
  • 5 lbs  of Corn Flour
  • 3 Tbsp Baking Powder
  • 2 Tbsps Baking Soda
  • 2 lbs of Lard or 3 to 4 cups of Vegetable, canola, or olive oil
  • 1 Tbsp Cumin
  • 20 Chile Guajillo or NM or California Chili Pods
  • 3 Chile Anchos
  • 10 Chiles de Arbol (optional)
  • 14 to 15 cups of water to boil the meat
  • 60 to 70 Corn Husks
  • Parchment Paper (Optional)
