  • 1 small onion, roughly chopped
  • 8 c. low-sodium chicken broth
  • 2 Tbsp. fish sauce, divided
  • 2 large boneless, skinless chicken breasts (each about 8 oz.)
  • 4 to 5 oz. wide instant rice noodles (not vermicelli)
  • ½ Tbsp. fresh lime juice, plus lime wedges for serving
  • Mung bean sprouts, sliced red chile, and cilantro, for topping
