Lasagna Soup with Cheesy Topper by Laura Behrendt
Ingredients
  • 2 TBSP. Olive oil
  • 1.5 lbs. ground beef/pork (any combination)
  • 1 lg onion chopped
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 3 oz. tomato paste (½ can tomato paste)
  • 2 cans diced tomatoes (14.5 oz. each=29 oz. total
  • 6 cups broth or stock ( ½ beef and ½ chicken)
  • 1 bay leaf
  • 8 oz. Campanelle (Mafalda, rotelle are fine too)
  • Salt and pepper to taste

  • 15 oz ricotta
  • ½ cup Parmesan
  • ½ tsp salt
  • ¾ tsp. dried basil (fresh chopped basil 1 Tbsp.)

  • 1 cup shredded Mozzarella (just to sprinkle on top)
