Roasted Artichoke & Asparagus Salad
Ingredients
  • 1 can Artichoke hearts quartered, drained.
  • Asparagus tips and tender stems chopped.
  • ¾ cup cherry tomatoes sliced in half.
  • 1 cup canned butter beans drained and rinsed.
  • ⅓ cup sliced green olives.
  • ¼ cup red onion chopped.
  • Handful fresh parsley chopped.
  • 2 tablespoons extra virgin olive oil.
  • juice of 1 lemon.
  • salt & pepper to taste.
