Korean Fried Chicken Wings
Ingredients
  • 2 lbs chicken wings
  • 5 C, peanut oil for frying (sub any oil with a high smoke point)

  • ½ C cornstarch
  • 2 t, Meat Church Holy Cow
  • 1 T freshly grated ginger
  • ½ t baking powder

  • 4 T butter
  • 5 to 6 dried red chilies, broken up or sliced. We use chili de arbol.
  • 4 T gochugang
  • 4 T honey
  • 2 T ketchup
  • 2 T brown sugar
  • 1 T rice vinegar
  • 1 t soy sauce
  • 1 T fresh garlic, minced
  • 1 T fresh ginger, peeled & grated
  • subheading: Garnish, optional:
  • sesame seeds
  • green onion sliced on a bias
  • subheading: Tools:
  • 5 cups frying oil. We use peanut.
  • Instant Read Thermometer
  • round mesh skimmer (AKA Spider)
  • large pot or dutch oven for frying
