White Chocolate Mousse with Cherries
Ingredients
  • 2 C cherries, pitted and halved
  • 2 tsp sugar
  • 2 tsp amaretto
  • 85g chopped white chocolate
  • ¾ C cream
Steps
  1. Stir cherries with sugar and amaretto in a medium bowl, until combined.  Let stand, 5 min.
  2. Microwave chocolate in a small bowl, stirring halfway through, until melted.  1 to 2 min.
  3. Beat cream, using an electric mixer on medium, until soft peaks form, about 3 to 4 min.  Reduce speed to low and gradually beat in chocolate until just combined.  Mixture should be smooth and fluffy.
  4. Layer mousse and cherries into 4 individual serving dishes.
