Banana Baked Oatmeal

Ingredients
  • 3 cups old fashioned rolled oats
  • ¼ teaspoon salt
  • 2 large bananas, mashed (1 heaping cup)
  • 2 large eggs, lightly beaten
  • ⅓ cup xylitol
Steps
  1. 1. In a medium bowl, place oats, salt, bananas, eggs, and xylitol and stir to combine well.
  2. 2. Lightly spray a 6" cake pan with cooking spray. Transfer the oat mixture to the pan.
  3. 3. Pour 1½ cups water into the inner pot. Place a steam rack in the inner pot and place the pan on the steam rack. Secure the lid.
  4. 4. Press the Manual or Pressure Cook button and adjust the time to 7 minutes.
  5. 5. When the timer beeps, quick-release pressure until float valve drops and then unlock lid.
  6. 6. Allow the oatmeal to cool 5 minutes before serving
