Ingredients
  • 2 ½ c. flour (all-purpose or whole wheat or whole wheat pastry)
  • ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • dash freshly grated nutmeg
  • 1 stick (½ cup) butter, softened
  • ½ cup plus 2 tbsp sugar
  • 1 egg
  • ⅔ c. applesauce
  • ½ c. yogurt or buttermilk
  • ½ c. molasses
  • 1 c. hot water
Steps
  1. Preheat oven to 350. Grease a 9×9 (or 8×8, or 9×13) pan.
  2. Whisk together flour, salt, baking powder & soda, and spices. Cream butter and sugar in a mixer until paste-like and still a bit grainy. Beat in egg and yogurt.
  3. Combine molasses and hot water in Pyrex measuring cup. With mixer on low, alternate adding molasses mixture, flour, and applesauce, a third at a time, scraping bowl as necessary. Spoon into pan and bake 35 to 45 minutes, until cake tester comes out clean. Cool completely on rack. It’s good with cream cheese or whipped cream.
