Kimchi Cauliflower Fried Rice
Ingredients

  • 1 Cauliflower (medium head, to get 3 cup Cauliflower Rice)
  • 1 Cup Kimchi (medium spicy, roughly chopped)
  • 2 Lime (to get 2 tbsp juice. Rest cut into wedges for serving)
  • ¼ Cup Cilantro (fresh leaves, chopped)
  • 2 tsp Sesame Oil
  • 1 Red Bell Pepper (cored, thin sliced)
  • 3 tbsp Soy Sauce (use gluten free tamari.)
  • ½ tbsp Sambal Chili Paste
  • 2 tbsp Olive Oil (or cooking oil of choice)
  • 1 small Bunch Green Onion (scallions, sliced, white and green divided)
  • 1 tbsp Garlic (3 to 4 large cloves, minced)
