crock pot corn chowder

Ingredients
  • 2 tsp olive oil
  • 1 med onion, chopped
  • 1 celery rib, chopped
  • 1 large yukon gold potato, peeled and cut into ΒΌ-inch dice
  • 4 cups corn
  • 4 cups veg broth
  • 1 or 2 chipotle chiles in adobo, minced
  • salt and pepper
  • 2 Tb cilantro or parsley, for garnish
Steps
  1. Heat oil in skillet over med-high heat. Add onion and celery, saute until soft, 5 min.
  2. Transfer veg to slow cooker. Add potato, corn, broth, and chipotles. Season with salt and pepper. Cover and cook on low for 6 hours.
  3. Blend portion of soup with imersion blender. Serve with cilantro.
