bean tomato soup
Ingredients
  • Smoky White Bean and Tomato Soup

  • A good drizzle of olive oil
  • 1 to 2 medium celery stalks, thinly sliced
  • 2 large carrots, diced small
  • 1 medium yellow onion, diced small
  • 3 to 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon smoked paprika
  • 2 heaping tablespoons tomato paste, I typically buy the kind that's in a tube and squeeze out what I need, instead of in a can
  • 5 cups vegetable broth
  • 1 - 14.5 ounce can petite diced tomatoes, drained
  • 2 - 15.5 ounce can great northern beans, drained and rinsed
  • 1 teaspoon grade A maple syrup, optional
  • 1 teaspoon tamari, optional
  • 1 bay leaf
  • a few drops of liquid smoke, optional
  • salt and pepper, to taste
