Easy Roasted Cauliflower Tacos with Spiced Chickpeas
Ingredients

  • 2 15-oz can chickpeas 425g, strained and patted slightly dry
  • 4 Tbsp olive oil 30 mL
  • 2 Tbsp chili powder
  • 4 tsp paprika
  • 1 tsp salt
  • 0.5 tsp cumin
  • subheading: Avocado Sauce:
  • 2 ripe avocado
  • 2 clove garlic minced
  • 0.5 cup good olive oil 60 mL
  • Juice of ½ lime
  • 4 Tbsp chopped parsley
  • Salt and pepper to taste
