Ingredients

  • ½ tsp onion granules
  • 2 tsp cornflour
  • 125ml oat or soy milk
  • small bunch of basil, leaves shredded, plus a few extra leaves to serve
  • 2 tsp olive oil
  • 100g baby leaf spinach
  • 225g cherry tomatoes, halved
  • 2 thyme sprigs, leaves picked
  • green salad, to serve
