Ingredients
  • subheading: Marinade:
  • 2 tbsp of olive oil (reduce to 2 tsps when ½ing recipe to try)
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp dried oregano
  • ½ tsp ground cumin
  • ¼ tsp coriander
  • ¼ tsp paprika
  • ⅛ tsp black pepper
  • juice and zest from 1 lemon
  •

  • 3 oz chicken
  • 30 grams soy curls
  •  
  • subheading: To assemble the flatbreads:
  • 2 flatbreads, pita, etc
  • greens
  • sliced tomatoes
  • green onion, sliced length-wise
Steps
  1. Soak soy curls in hot water for 10 minutes. Drain and set aside to cool while you make the sauce.
  2. Prepare the Spicy Garlic Tahini Dressing
  3. Whisk together the oil, garlic, lemon zest and juice, salt, pepper, oregano, cumin, coriander and paprika. Divide in halve.
  4. Once the soy curls are cool to touch, give them a squeeze to get out all the extra fluid and place in a dish.
  5. Add the ½ marinade to the bowl of soy curls and toss to coat. Do the same for the chicken.
  6. Heat 2 frying pans over medium heat. Add soy curls and any marinade bits and fry for 10 to 15 minutes, until browned. The little bits might get extra brown, but that's OK and adds a nice flavor. You'll want to scrape up the little browned pieces as your frying and mix them in. Taste them off the spatula once they stick. Those bits are yum!
  7. At the same time, fry the chicken pieces until no longer pink. If there's still a lot of sauce and the chicken is done, push the chicken to the side and let the sauce cook down and then stir the chicken back in.
  8. Grill or heat bread, such as flat bread or a pita. Spread on some of the Spicy Garlic Tahini Dressing , and followed by greens, tomatoes, and green onion. Drizzle with a little more of the sauce and enjoy!
