Gluten-Free Coconut Macaroons
Ingredients
  • 2 ⅔ cups sweetened shredded coconut
  • ⅔ cup sugar
  • 4 tablespoons gluten-free all-purpose flour with xanthan gum (I like Pillsbury gluten-free flour. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.)
  • ¼ teaspoon salt
  • 4 large egg whites at room temperature
  • ½ teaspoon pure vanilla extract
  • ½ teaspoon pure almond extract
  • ½ cup gluten-free chocolate chips (optional) (For dairy-free use Nestle Allergen Free Semi-Sweet Morsels or Enjoy Life.)
