- 5 to 7 dried whole Thai chiles
- One 1-inch-piece fresh ginger, cut into thin matchsticks
- 2 scallions, thinly sliced on the bias, greens and whites separated
- 2 teaspoons ground Sichuan peppercorns
- 3 tablespoons light soy sauce
- 1 teaspoon dark soy sauce
- 2 tablespoons oyster sauce or mushroom oyster sauce (see Cook’s Note)
- 2 tablespoons rice wine vinegar
- 2 teaspoons brown sugar
- 3 tablespoons roasted unsalted peanuts, chopped
