Roasted Potatoes with Peppers & Onion Omelette

Ingredients
  • 1 cup Trader Joe’s frozen Roasted Potatoes with Peppers & Onions
  • More pepper pieces, home cooked or bottled
  • ¼ medium tomato, cut up
  • 1 or 2 Eggs
  • Salt
  • Trader Joe’s Soffrito Seasoning
  • Ketchup (untried)
Steps
  1. Stir fry the vegetables on medium to medium high.
  2. Add and cook well-stirred eggs or fry them in middle of the skillet.
  3. Sprinkle salt and seasoning over dish.
  4. Add ketchup if used.

  6. Empty into a sauce pan over low heat. Stir fry over medium heat until heated through. Continue to cook until crisp and as brown as you like.
