Eggs Benedict with Hollandaise Sauce in the Microwave
Poached eggs are a revelation when cooked in the microwave, so we thought we'd whip up some hollandaise sauce to complete this brunch favorite. Turns out it's incredibly easy to make a velvety emulsion of butter, lemon juice, heavy cream and egg yolks with your microwave and an immersion blender. Layer an English muffin, Canadian bacon, poached egg, and a drizzle of hollandaise for a decadent start to your day.
Ingredients
  • subheading: For the hollandaise sauce:
  • 4 tablespoons butter, diced (½ stick)
  • ½ teaspoon lemon juice
  • ¼  cup (60ml)  heavy cream
  • 2 egg yolks
  • ¼ teaspoon dijon mustard
  • ½  teaspoon worcestershire sauce
  • ¼ teaspoon of salt
  • subheading: For the eggs benedict:
  • 2 poached eggs
  • 2 English muffins, toasted
  • Canadian bacon or regular bacon, optional
  • paprika, for garnish
