Used a mix of these two recipes and my own adjustments for Thanksgiving 2019. It was forgotten and left in the microwave at dinner time, but I wolfed it down over the next few days. So good!

Ingredients
- 566g frozen spinach or 2 lb fresh
- 4 Tbsp butter
- ½ cup onion, chopped small
- 2 cloves garlic, minced
- 3 Tbsp flour
- ½ cup milk
- ½ cup spinach cooking liquid
- 1 tsp Worcester sauce
- ½ tsp pepper
- Salt to taste
- 2 oz jalapeno cheese (or any kind of cheese - Velveeta makes it magical)
- 2 oz cream cheese
- Chili flakes to taste
- optional: breadcrumb or cheese for topping
Steps
- Cook spinach, drain and reserve liquid. Chop spinach.
- Saute onion and garlic in butter. Once transparent, stir in flour until incorporated. Slowly add milk and spinach liquid until smooth and thick.
- Add seasonings and cheese until melted. Add chopped spinach. Season to taste.
- Serve straight from the pan or bake at 180C/350F if you’d like. Optionally top with more cheese, breadcrumbs, parmesan.
Notes
- optional: sodium citrate for extra smoothness
- optional: MSG for extra oomph
