Cauliflower & White Bean Soup
Ingredients
  • 2T olive oil
  • 1med onion, chopped
  • 2 cloves garlic, minced
  • 1t sage & thyme
  • 1large frozen cauliflower or med head
  • 4c (1box) broth
  • 1can 15oz white beans
  • Pepper
  • Salt
Steps
  1. Heat oil and sauté onions until softened
  2. Add garlic, sage & thyme
  3. Cook about 1minute
  4. Add cauliflower and beans
  5. Salt an pepper to taste
  6. Simmer30 min until cauliflower is soft
  7. Use immersion blender and blend until smooth
  8. Add spices to taste
  9. broth (or water) if too thick
