Ingredients
  • 1 block firm tofu drained
  • 1½ tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons rice vinegar
  • 2 teaspoons salt
  • ½ teaspoon black pepper
Steps
  1. using your hands crumble the tofu into a food processor. Add lemon juice, olive oil, vinegar, salt and pepper and pulse well until well combined, but not smooth
Notes
  • Try this ricotta in vegan lasagna
