Ingredients
- 1 block firm tofu drained
- 1½ tablespoons fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons rice vinegar
- 2 teaspoons salt
- ½ teaspoon black pepper
Steps
- using your hands crumble the tofu into a food processor. Add lemon juice, olive oil, vinegar, salt and pepper and pulse well until well combined, but not smooth
