Sweet and Sour Pork – Bobbye Zee - mine
Ingredients
  • 2 to 3 cups cubed pork - about ¾ to 1” chunks
  •  
  • Group 1
  • 1 tablespoon dry sherry
  • 1 tablespoon soy sauce
  • 1 clove minced garlic
  • 2 tablespoons grated ginger
  • 1 teaspoon salt
  •  
  • Group 2
  • 1 bell pepper cut in strips - 1 inch strips
  • 1 onion - cut in strips - 1 inch strips
  • 1 carrot cut in bite sized chunks
  • 1 can pineapple chunks in juice - do not drain
  •  
  • Group 3
  • 1 tablespoon soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons vinegar
  • 2 tablespoons catsup
  •  
  • Group 4
  • 1 to 2 tablespoons cornstarch
  • 1 to 2 tablespoons water
Steps
  1. Marinate pork with group 1 for 10 minutes to an hour.
  2. Prepare group 2 and set aside.
  3. Mix group 3 together.
  4. Mix Group 4 together and set aside.
  5. Put all ingredients in the liner EXCEPT GROUP 4 and stir it up.
  6. Put the lid on and move vent to seal.
  7. Manual/Pressure 7 minutes - 10 minutes NPR
  8. If it is too thin hit cancel and then sauté. When bubbly mix in the prepared cornstarch slurry and cook until thick and shiny.
Notes
  • Serve over steamed rice, cauliflower rice, quinoa etc
  • This can be made with chicken or tofu
