Baked Potato with Bacon, Taleggio and Leek
Ingredients
  • 4 large baking potatoes
  • 1 tbsp olive oil
  • sea salt
  • 25g/1oz butter
  • 1 shallot, finely chopped
  • 1 garlic clove, finely sliced
  • 2 leeks, sliced lengthways then across into slices
  • 75ml/2½fl oz white wine
  • 300ml/10½fl oz double cream
  • 150g/5½oz taleggio cheese, roughly chopped
  • 8 slices streaky bacon
  • salt and freshly ground black pepper
