Creamy Garlic Chicken
This is 20 days of 20 minute dinners on a budget. I’m making this recipe which I think looks impressive, yet is so fast and easy to make. This Creamy Garlic Chicken is made with a few simple ingredients making it the perfect weeknight family dinner to enjoy at the end of a long day.
I know what you’re thinking, who has time to make mashed potatoes on a weeknight? I definitely don’t, which is why I have an amazing mashed potato recipe coming soon that you can make in bulk and freeze. The star of the show though is the chicken - it’s seasoned beautifully and the flour creates a crust that the sauce can cling onto. It’s much cheaper than eating out, yet feels fancy and indulgent, save this one for when you next need some dinner inspo!
Ingredients
  • subheading: CHICKEN:
  • 2 chicken breasts, cut in half lengthways to make 4 schnitzels
  • 1 tsp salt flakes
  • ¼ tsp pepper
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • ¼ cup plain/all-purpose flour
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • subheading: SAUCE:
  • 1 tbsp unsalted butter
  • 1 tbsp garlic, freshly minced
  • ½ cup chicken stock
  • 300 ml thickened/heavy cream
  • 1 tsp Dijon mustard
  • ½ cup Parmesan cheese
  • Salt and pepper, to taste
  • subheading: TO SERVE:
  • Mashed potatoes, steamed rice or pasta
  • Steamed greens
  • 1 tbsp parsley, finely chopped
  • Lemon wedges
