Ingredients

  • 240 ml (1 cup) unsweetened non-dairy milk (I use soy)
  • 100 g (⅓ cup 1 Tbsp) unsweetened non-dairy yogurt (I use soy)
  • 2 tsp cider or white wine vinegar
  • 350 g (3 cups) plain (all-purpose) flour
  • 2 tsp baking powder
  • ½ tsp bicarbonate of soda (baking soda)
  • 3 tsp mixed spice (pumpkin spice)
  • ½ tsp salt
  • 225 g (8oz / ¾ cup 3 Tbsp) vegan block butter (NOT the spreadable kind. I use Naturli Vegan Block) softened
  • 300 g (1 ⅔ cup) light brown soft sugar
  • finely grated zest of 2 oranges
  • 350 g (12oz) mincemeat
  • subheading: Glaze:
  • 120 g (1 cup) icing (powdered) sugar sifted
  • 2 to 3 Tbsp rum, whisky or orange juice
