Turkey and Summer Vegetable Soup (Paleo, Whole30 Keto)
Ingredients
  • 1 onion diced
  • 6 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tbsp avocado oil
  • 2 lbs ground turkey (or sub ground chicken)
  • 8 cups chicken broth
  • 2 small yellow squash, sliced (about ½ lb)
  • ½ lb green beans, trimmed and cut into 1 inch pieces (about 2 cups)
  • 3 tomatoes, roughly chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh sage, chopped
  • Salt and pepper
